Ingredients

1 ( 2 1/4 oz.) pkg. chopped hazelnuts

4 zucchini

2 tablespoons olive oil

1 large onion, chopped

3/4 lb. Italian sausage meat

1 teaspoon fresh thyme leaves

2 tablespoons golden raisins
>
1/2 cup panko bread crumbs

olive oil cooking spray

Preheat the oven to 350°. Grease a 9-inch by 13-inch baking dish. Toast the hazelnuts for 3 min in a pan without oil or butter. Cut the zucchini lengthwise and hollow out with a spoon. Chop the removed zucchini flesh. Heat oil in a frying pan and sauté the onion for 3 min on low heat.

Slit sausages and peel off skin. Add sausage meat to onions. Sauté for 5 min. on medium heat until golden brown. Use a wooden spoon to break up sausage meat into smaller pieces. Add the thyme leaves, raisins and chopped zucchini and cook for 3 min. Add nuts, salt (in moderation) and pepper.

Place the zucchini in the baking dish and fill with sausage mixture. Sprinkle panko crumbs over top of zucchini and spray with olive oil spray. Bake for about 25 min, or until cooked through and browned.
