Hummus and Goat Cheese Sandwich

Packed with avocado, cucumber, hummus, and goat cheese, this fresh sandwich is perfect for picnics.

> 1 round sourdough loaf
> 1 avocado
> 1 English cucumber
> 1 cup red pepper hummus
> 2 cups baby spinach
> 1 (4 oz) pkg goat cheese, crumbled


Cut the top off the bread with a serrated knife and set aside. Remove some of the insides of bread to make room for fillings. Thinly slice the avocado and the cucumber. Spread half of the hummus on the bottom of the bread and layer with half of the avocado, half of the cucumber, and half of the spinach. Season with salt and pepper. Top with half of the goat cheese.
Layer with remaining avocado, cucumber, spinach, and goat cheese. Slather remaining hummus on the top piece of the bread. Return the top to the bread and press firmly. Cut the sandwich into wedges and serve.
