Mini Meatloaves – Kid Friendly

These beef mini-meatloaves are kid-friendly for many reasons: they're unadorned with adult spices, prepared in muffin tins to keep the portions manageable, and quite simply, they taste great in the tomato sauce. Pass extra Parmesan at the table. They are delicious served with ketchup, as well.

Ingredients

> 1 lb 90% lean ground beef
> 1/2 cup quick-cooking oats
> 1/2 cup finely minced onion
> 1/4 tsp ground black pepper
> 1/4 tsp garlic powder
> 1/2 tsp dried oregano
> 1/2 cup finely grated carrot
> 5 tbsp Parmesan cheese (1/4 cup + 1 tbsp, divided )
> 1 8 oz. can tomato sauce, divided

Preheat oven to 375°F. Spray 12 muffin cups with nonstick cooking spray and set aside.

In a large bowl, combine ground beef, oats, onion, pepper, garlic powder, oregano, carrot, ¼ cup parmesan cheese and half of the tomato sauce and mix well.

Divide into muffin cups and bake for 25 minutes. During the last five minutes, top with the remaining tomato sauce.

Remove from oven and sprinkle with remaining 1 tablespoon of Parmesan cheese.
