1 (8 oz) pkg cooked beets

1/2 cup unsweetened applesauce

1/2 cup pitted Medjool dates

1/4 cup granulated sugar

2 large eggs

3 tbsp olive oil

1 tsp vanilla extract

2/3 cup white whole-wheat flour

1/2 cup unsweetened cocoa powder

1/4 tsp baking powder

1/4 tsp salt

Preheat oven to 350°F. Coat an 8x8-inch metal baking pan with the cooking spray, then line with parchment.

To a food processor, add the beets, applesauce, dates, sugar, eggs, oil, and vanilla. Purée until smooth.

In a medium bowl, combine the flour, cocoa powder, baking powder, and salt. Add beet mixture to flour mixture. Stir until just combined. Scrape brownie batter into prepared pan, then smooth top with a spatula.

Bake 30–40 min., until a toothpick inserted into center comes out clean. Let cool completely, then cut into squares.
Tips
Add ½ cup semisweet chocolate chips to the brownie batter.
