Gingered Apple-Cheddar Slaw

A unique slaw blend both creamy and crisp. Whisk in mayo, ginger, and vinegar for a zesty meet-up with sweet apples, velvety cheddar, and cilantro topping. Served chilled for great results and impress guests at your next barbecue.

> 2 tbsp light mayonnaise
> 1 tbsp rice vinegar
> 1 tsp peeled, finely grated fresh ginger
> 1 Fuji apple
> 2 oz Cabot Sharp Light Cheddar, coarsely grated (about 1/2 cup)
> 2 tbsp coarsley chopped fresh cilantro


In medium bowl, whisk together mayonnaise, vinegar and ginger.
Cut apple into quarters and cut away cores. Cut quarters into thin slices, then stack several slices and cut into matchsticks.
Add apple, cheese and cilantro to bowl and toss gently to combine.
