1 1/2 cups gluten-free all-purpose flour

1/4 cup ground flaxseed

2 tbsp sugar

1 tbsp pumpkin pie spice

2 tsp baking powder

1/2 tsp baking soda

3 large eggs, separated

3 tbsp canola oil

1 cup low-fat milk

Preheat a greased waffle iron on medium. In a large bowl, combine the flour, flaxseed, sugar, pumpkin pie spice, baking powder, baking soda, and salt.

To bowl with flour, add the egg yolks, oil, and milk. Stir until just combined. Add egg whites to separate medium bowl. Using a handheld mixer, whip egg whites until stiff peaks form. Gently fold egg whites into batter.

Spoon some batter into waffle iron. Cook 4–5 min., until golden brown and crisp. Repeat with remaining batter. Serve immediately.
