Gnocchi in Zucchini-Tomato Sauce

A Mediterranean-style end-of-summer dish with plenty of flavor.

Ingredients

> 1 (16 oz) pkg frozen gnocchi
> 1/4 cup olive oil
> 8 oz bacon, chopped
> 2 tablespoons chopped fresh sage
> 2 cloves garlic, crushed
> 2 zucchini, diced
> 1 (24 oz) jar pasta sauce
> 1/2 cup grated Parmesan cheese

Cook gnocchi according to package instructions. Drain and set aside.

Heat 2 tbsp oil in a large skillet and sauté the bacon, gnocchi and sage for 10 min, or until golden brown, stirring frequently.

Heat the remaining oil in another pan and sauté the garlic for 1 min. Add the zucchini and cook for 5 min on medium heat. Add the pasta sauce and cook for 4 min. Season with salt and pepper to taste.

Top the gnocchi with the zucchini sauce, sprinkle with cheese and serve.
