Gnocchi with Meatballs

Boil gnocchi just until they’re cooked--not any longer or they’ll become mushy. Follow the timing on the package, then taste one before draining.

Ingredients

> 1 lb  cooked meatballs
> 1 (16 oz) pkg potato gnocchi
> 1 cup marinara sauce
> 2 tbsp pesto
> 2 cups arugula, divided
> 1 cup shredded mozzarella cheese
> 1/4 cup basil leaves

Preheat the broiler on high. Heat the meatballs according to package directions in the microwave.

In a deep oven-safe skillet, heat 4 cups of water to a boil on high. Add the gnocchi and cook until just tender, about 5 min. Drain gnocchi and return to skillet, along with the marinara sauce, pesto, meatballs, and 1 cup arugula. Toss until well-coated. Top with the mozzarella.

Place skillet under broiler and broil 2–3 min., until cheese is melted. Chop the basil and sprinkle on top, along with remaining arugula.
