Ingredients

> 2 large flour tortillas
> 2 cups low-fat sour cream
> 1 (1 oz) pkg taco seasoning
> 2 avocados
> 1 tbsp lime juice
> 1/4 cup chopped red onion
> 1 (16 oz) can refried beans
> 1 1/2 cups mild salsa
> 3 green onions
> 1/3 cup sliced black olives

Steps

1
Preheat the oven to 350°F. Using a knife or kitchen shears, cut the tortillas into tombstone shapes. Bake on a parchment-lined baking sheet until golden brown, about 7 min.
2
Meanwhile, in a small bowl, combine sour cream and taco seasoning. Cut the avocados in half and remove the pits. With a spoon, scoop avocado flesh into a small bowl; mash and mix with the lime juice and red onion.
3
In a small baking dish or pie plate, spread the beans in an even layer. Top with a layer of sour cream, followed by a layer of the avocado mixture. Finish with a layer of salsa. Garnish with chopped green onions and olives. Stick tombstone tortillas into the salsa.

Tips

Use a cake decorating pen or edible ink to write on the tortilla tombstones.
