Greek Salad Focaccia

Turn your Greek salad into a sandwich inspired by the Mediterranean.

> 1 loaf focaccia bread
> 3 tbsp olive oil
> 3 tbsp olive tapenade
> 1/2 pint cherry tomatoes
> 1 cucumber
> 1/2 cup diced red onion
> 1/2 cup sliced black olives
> 1/2 cup crumbled feta cheese
> 2 tbsp balsamic vinaigrette dressing


Slice the focaccia bread in half and drizzle 1 tbsp oil over each half of the bread. Spread tapenade across one of the halves.
Halve the cherry tomatoes and dice the cucumber into ½-inch pieces. Set in a large bowl with red onion, olives, and feta cheese. Toss with balsamic dressing and set over the tapenade. Top with remaining focaccia half. Slice into 6 pieces and serve.


Toast the bread or warm it in the oven before assembling the sandwich.
