Grilled Goat Cheese, Tomato, and Arugula Sandwiches

Ingredients

> 8 slices white bread
> 1 (4 oz) pkg goat cheese, softened
> 2 tomatoes
> 1 ½ cups arugula
> cooking spray

Thinly slice the tomatoes. Spread the bread slices with goat cheese. Top 4 slices with tomato and arugula. Place the remaining bread on top, cheese-sides down. Spray outsides of sandwiches with cooking spray.

2 Spray a grill pan or skillet with cooking spray and cook 2 sandwiches on medium 7–8 min., flipping halfway through, or until toasted and warmed through. Repeat with remaining 2 sandwiches and serve immediately.
