Grilled Pork Chops with Charred Cabbage

Ingredients

> 1 medium head green cabbage
> 1 tbsp lemon pepper seasoning
> 2 tsp smoked paprika
> 1 tsp garlic powder
> 4 bone-in pork chops (about 1-inch thick)
> 5 tbsp canola oil, divided
> 2 tbsp grated Parmesan cheese
> 1 lemon, halved

Set grill to medium-high and grease the grill grates. Halve the cabbage. Keeping the core intact, cut each half into 3 even wedges. In a small bowl, combine the lemon pepper seasoning, smoked paprika, and garlic powder. Season mixture with salt.

Pat the pork chops dry with paper towels and season with salt and pepper. Rub both sides of pork with 2 tbsp oil and half of lemon pepper mixture. To bowl with remaining lemon pepper mixture, add the Parmesan cheese and remaining 3 tbsp oil. Brush both sides of cabbage wedges with seasoning mixture and season with salt and pepper.

Grill cabbage wedges 6–8 min. per side, until tender and edges are charred. Grill pork chops 5–7 min. per side, until internal temperature reaches 145°F. Place the lemon cut-sides down on grill and grill 3–4 min., until charred. Let pork rest 5 min. Serve pork chops with cabbage wedges, squeezing grilled lemon over both to serve.
