Whipped Feta with Watermelon and Cucumber

This elegant, no-cook watermelon and cucumber salad is served over whipped feta. Ideal for summer gatherings or a light meal, it's both stunning and delicious.

Ingredients

> 7 oz feta cheese block
> 1/2 cup nonfat plain Greek yogurt
> 2 tbsp half-and-half
> 3 tbsp olive oil, divided
> 1 English cucumber
> 6 cups diced seedless watermelon
> 1/4 cup sliced red onion
> 1/4 cup chopped fresh mint leaves

To a food processor, add the feta, yogurt, half-and-half, and 2 tbsp oil. Season with salt and pepper. Pulse 2–3 min., scraping down the sides of the bowl as needed, until the feta is silky smooth.

Chop the cucumber. To a medium bowl, add the watermelon, onion, and cucumber. Add remaining 1 tbsp oil and season with salt. Toss with the mint. Spread whipped feta evenly on a serving platter. Top with watermelon and cucumber mixture and serve immediately.

Tips

If desired, serve with toasted baguette slices or rolls.
