1 lb thin boneless pork chops

2 tbsp olive oil, divided

3 ripe plums

1 lemon

2 tsp sugar

1/2 tsp crushed red pepper

5 leaves fresh basil

4 cups baby spinach

Set grill or heat grill pan to medium-high. Brush the pork chops with 1 tbsp of the oil and season with salt. Grill pork chops 4–5 min. per side.

Meanwhile, pit and thinly slice the plums. Into a medium bowl, grate the zest and squeeze the juice from the lemon. Add plums, sugar, red pepper, and remaining 1 tbsp olive oil. Toss to combine.

Chop the basil. Divide spinach among plates. Top with pork chops. Spoon plums over pork chops. Garnish with basil.
