Teriyaki Air Fryer Salmon Bites with Bok Choy and Rice

Salmon gets crispy in the air fryer with this speedy preparation. Have lunch or dinner ready in just 15 minutes with this easy recipe.

Ingredients

> 6 baby bok choy, quartered
> 1 tbsp sesame oil
> 1 (1 lb) salmon fillet, skin removed
> 1 tbsp brown sugar
> 1 tbsp chili powder
> 1/2 tsp ground ginger
> Cooking spray
> 1 (15.9 oz) pkg Nature's Promise® Precooked Brown Rice
> 1/4 cup teriyaki marinade
> Sesame seeds, for garnish

Preheat air fryer to 400°F. In a large bowl, toss the bok choy with the sesame oil. Season with salt and pepper. Transfer to air fryer basket. Cook 5 min., until tender. Meanwhile, cut the salmon into 1-inch pieces and add to large bowl. Add the brown sugar, chili powder, ground ginger, salt, and pepper. Toss to coat salmon pieces.

Remove bok choy from air fryer basket. Spray air fryer basket with the cooking spray. Add salmon to basket. Cook 5–7 min., until salmon is fully cooked, tossing halfway through.

Meanwhile, microwave the rice according to package directions. Divide rice among 4 bowls. Top with bok choy and salmon bites. Drizzle 1 tbsp teriyaki marinade over each bowl. Garnish with the sesame seeds.

Tips

Can’t find bok choy? Substitute with 1 lb broccoli florets.
