Ham and Cheese Breakfast Bake

A cozy breakfast casserole studded with chopped ham and cubed bread is the ideal low-lift meal for holiday mornings—or any day when comfort calls. Use slightly stale bread and allow the mixture to soak in the fridge for several hours (preferably overnight) for the best flavor and texture.

Ingredients

> Cooking spray
> 6 large eggs
> 2 cups whole milk
> 4 green onions, trimmed and chopped
> 1 tbsp Dijon mustard
> 1/2 tsp garlic powder
> 8 cups cubed stale French bread
> 2 cups chopped ham
> 1 (8 oz) Swiss cheese block, coarsely grated
> 2 tbsp chopped chives, to garnish

Steps

1
Coat a 9x13-inch baking dish with the cooking spray. To a large bowl, add the eggs, milk, green onions, mustard, and garlic powder. Season with salt and pepper. Whisk to combine.
2
To bowl, add the bread cubes, ham, and cheese, tossing gently to combine. Transfer to prepared baking dish. Cover and refrigerate at least 4 hours or overnight.
3
Preheat oven to 350°F. Uncover baking dish and use a spatula to press bread back into the custard. Spray a large piece of aluminum foil with cooking spray and cover baking dish, greased-side down. Bake 30 min. Uncover and bake 15 min., until the casserole is puffed and lightly golden. Remove from oven and heat broiler on high. Broil 1–3 min., until golden brown, watching carefully to prevent burning. Sprinkle with the chives and let rest 10 min. before serving.
