Ingredients

1 cup Hellmann's ® Real Mayonnaise

2 lbs potatoes (5 to 6 medium), peeled and cut into 3/4-inch chunks

2 tbsp vinegar
>
1 1/2 tsp salt
>
1 tsp sugar
>
1/4 tsp ground black pepper
>
1 cup celery, thinly sliced
>
1/2 cup onion, chopped
>
2 hardboiled eggs, chopped (optional)
>
4 slices bacon, crisp-cooked and crumbled (optional)
>
2 tbsp fresh chives, chopped (optional)

Cover potatoes with water in a 4-quart saucepan; bring to a boil over medium-high heat. Reduce heat and simmer until potatoes are tender, about 10 minutes. Drain and cool slightly.

Combine Hellmann's® Real Mayonnaise, vinegar, salt, sugar, and pepper in a large bowl. Add potatoes and remaining ingredients and toss gently. Serve chilled or at room temperature.
Tips
Chef's Tip: Make sure to toss potatoes with the dressing while they are still warm. That way they really soak up the flavor! Also terrific with Hellmann's® Mayonnaise Dressing with Olive Oil.
Use leftover cooked potatoes or boil the potatoes the night before to save prep time.
