Ingredients

1 lb lamb rib chops

1 tbsp garlic

2 tbsp minced fresh rosemary

1 tbsp minced fresh thyme

1 tbsp olive oil
Horseradish sauce
>
4 tbsp horseradish
>
1/2 cup mayonnaise
>
2 tsp Worcestershire sauce
>
1/4 cup chopped scallions

Preheat oven to 400F and an oven safe skillet over medium high heat with the olive oil. Mix together the rosemary, thyme, and garlic and rub into the lamb chops on both sides. Season with salt (in moderation) and pepper. Brown the chops in the hot oil for 2-3 min or until dark brown. Flip and place the skillet in the oven for 12-15 min or until lamb reaches an internal temperature of 145 F.

Meanwhile mix the horseradish, mayonnaise, Worcestershire sauce and scallions until well blended.

Serve cooked lamb chops with horseradish sauce.
