1 cucumber

Roast the pita bread in the oven until warm and slightly toasted. Cut each piece into 8 slices. Set aside.

Dice the cucumber, quarter the tomatoes, and slice the green onions. Coarsely chop the herbs. Juice the lemon. Toss everything with the oil, vinegar, and lemon juice. Season with salt (in moderation) and pepper to taste. Divide the salad and bread among 4 bowls.
Tips
Brush pita with extra virgin olive oil and season with salt (in moderation) and pepper before toasting.
