Homemade Breakfast Tacos

Microwaved scrambled eggs are combined with lightly steamed spinach and melty cheese for 5-ingredient breakfast tacos that are cooked and assembled in 5 minutes.

Ingredients

> 1 cup baby spinach
> 2 large Eggland's Best ® Classic Eggs
> 2 tbsp shredded Cheddar cheese
> 2 corn tortillas
> 2 tbsp Nature's Promise ® Organic Salsa

To a greased small bowl, add the spinach. Microwave on high for 30 sec., until wilted. To bowl, add the eggs and cheese, whisking with a fork to combine. Season with salt and pepper. Microwave on high in 30-sec. increments until eggs are set, for a total of 1–2 min. depending on microwave strength, stirring occasionally.

Wrap tortillas in a damp paper towel. Microwave 30 sec., until warm. Divide eggs between tortillas and top with the salsa.
