Ingredients

2 lbs boneless, skinless chicken thighs

1 (2 - inch) piece ginger

3 tbsp butter

1/2 cup diced onions

1 tbsp minced garlic

2 tbsp garam masala

1 (6 oz) can tomato paste

1 (15 oz) can coconut milk
>
1/2 (15 oz) can tomato sauce
>
1 (12 oz) pkg fresh pepper medley

Cut the chicken into 1-inch chunks. Season with salt. Peel and grate the ginger. In a medium skillet, melt the butter on medium. Add the onion and cook 3 min., until golden. Add the garlic, ginger, garam masala, and tomato paste. Cook 1–2 min., stirring constantly, until fragrant and dry.

To a slow cooker, add the chicken, tomato paste mixture, coconut milk, and tomato sauce. Stir to combine. Cover and cook on low 4 hours.

Meanwhile, cut the peppers into smaller chunks. Stir peppers into slow cooker after 4 hours. Cook another hour. Season with salt.
