2 1/2 lbs boneless beef brisket

2 tbsp vegetable oil

1 yellow onion, sliced

1 cup beef broth

1 (0.5 oz) pkg Nature's Promise ® Organic Roasting Blend

4 cloves garlic

2 tbsp tomato paste
>
1/4 cup ketchup
>
1/2 cup mayonnaise
>
1/4 cup nonfat Greek yogurt
>
1 tbsp honey
>
1 lemon
>
1 (8 oz) pkg shredded red cabbage
>
2 (12 oz) pkgs Nature's Own® Perfectly Crafted® Brioche Butter Rolls, toasted if desired

Pat the brisket dry with paper towels and trim off excess fat. Cut the brisket in half to fit into the Instant Pot®. Season with salt and pepper on both sides. To Instant Pot®, add the oil and heat on sauté function on high. Using tongs, sear brisket on both sides, about 2–3 min. per side. Transfer to a plate.

To Instant Pot®, add the onion. Cook 4–6 min., until softened and beginning to brown, stirring frequently. Turn off sauté function. Add the beef broth, scraping up any browned bits with a wooden spoon.

Return brisket to Instant Pot® fat-side up, along with herb blend, garlic, tomato paste, and ketchup. Season with salt and pepper. Seal and set to cook on high pressure for 70 min. Let naturally release for 25 min.

Transfer brisket to a cutting board (do not discard cooking liquid). Discard herbs. Shred brisket and place in a medium bowl with ½ cup cooking liquid. In a large bowl, combine the mayonnaise, yogurt, and honey. Zest and juice the lemon into bowl. Season with salt and pepper and stir to combine. Add the cabbage and toss to coat.

Cut the rolls in half horizontally and place on a serving platter. Spread shredded brisket evenly over bottom halves of rolls. Add a layer of slaw and top with other half of rolls. Serve immediately, pulling apart sliders to serve.
Tips
To toast the buns, place halves on a baking sheet and broil 60–90 sec. on high, until lightly toasted.
