Italian Chopped Salad

This salad is packed with flavor from the salami, marinated artichokes, and spicy pepperoncini. The vinaigrette is made quicker, easier, and tastier by using the artichoke marinade.

> 1 (6.5 oz) jar marinated artichoke hearts
> 3 tbsp lemon juice
> 1 clove garlic, minced
> 1 tbsp dried oregano
> 2 heads Nature's Promise® Organic Romaine Lettuce Hearts
> 1/4 cup pepperoncini
> 1 small seedless cucumber
> 1/2 (8 oz) pkg salami, cubed
> 1/2 small red onion, thinly sliced
> 1 (10 oz) pkg Nature's Promise® Organic Grape Tomatoes, halved
> 1 (15.5 oz) can low-sodium cannellini beans, drained and rinsed
> 1 cup mozzarella pearls
> 1/4 cup Nature's Promise® Organic Pitted Kalamata Olives
> 2 tbsp grated Parmesan cheese


To a small bowl, add ¼ cup of the marinade made from the artichokes. Drain remaining artichokes from marinade and roughly chop. To bowl with marinade, add the lemon juice, garlic, and dried oregano and whisk to combine. Season with salt and pepper to taste.
Roughly chop the lettuce and pepperoncini; cube the salami. Halve and thinly slice the cucumber. To a large bowl, add artichokes, lettuce, pepperoncini, cucumber, salami, onion, tomatoes, beans, mozzarella, and olives. Drizzle with half of vinaigrette. Toss to coat evenly and season with salt and pepper to taste. Transfer salad to a platter and garnish with the Parmesan. Serve with remaining vinaigrette.
