Ingredients

1 lb fully cooked chicken tenders (from deli)

1/2 cup water chestnuts

1/2 cup peanuts

1/2 cup scallions
>
2 cloves garlic
>
2 tbsp soy sauce
>
1/4 cup hot chili paste

2 tsp sesame oil
>
4 cups fully cooked rice
>
2 tbsp white wine vinegar
>
1 tbsp cornstarch

Cook rice according to package directions.

Chop chicken tenders into bite-sized pieces.

Combine all ingredients (excluding rice) in wok and warm over medium heat until warm, about 5 minutes.

Serve over white rice.
Tips
• Add small birds eye chilies to spice it up.
• Substitute cashews for peanuts if desired.
• Use pineapple chunks to add some sweet and sour notes.
