Ingredients

1 lb ground lamb

1 tsp ground cumin

1/2 tsp dried oregano
>
1/2 cup golden or regular raisins

1/2 cup nonfat Greek yogurt

2 tbsp finely minced mint leaves, plus more to garnish

2 heads Boston or Bibb lettuce
>
1 (8.8 oz) pkg Nature's Promise® Precooked Brown Rice

To a 12-inch skillet on medium, add the lamb, cumin, oregano, and raisins. Season with salt and pepper. Cook 7–10 min., until browned, breaking up meat with a wooden spoon. Drain off excess fat from meat.

Meanwhile, in a small bowl, combine the yogurt and mint. Season with salt. Separate the lettuce leaves. Microwave the brown rice according to package directions. Add heated rice to cooked lamb.

Assemble the lettuce cups by spooning lamb mixture onto each lettuce leaf. Dollop yogurt on top to serve.
Tips
Substitute ground pork or ground beef for lamb, if desired.
