Ingredients

> 2 small Gala or Pink Lady apples, thinly sliced crosswise
> 2 lemons, thinly sliced crosswise
> 4 (8 oz) regular or wide-mouth mason jars
> 12 whole cinnamon sticks
> 12 whole cloves
> 12 slices fresh ginger root, unpeeled
> 4 sprigs fresh rosemary
> 4 cups apple juice

Steps

1
Divide the apple and lemon slices among the mason jars. To each jar, add 3 cinnamon sticks, 3 cloves, 3 ginger pieces, and 1 rosemary sprig. Add 1 cup apple juice to each jar. Seal. Refrigerate 4–5 days until ready to use.
2
To use each simmer pot, fill a medium pot or slow cooker halfway with water. Add mason jar contents. Bring to a slow simmer on low. Continue to simmer, uncovered, 3–4 hours, adding water as needed when liquid is reduced by about half.
