Grilled Peppers with Feta and Mint

These peppers make not only a crowd-pleasing veggie side, but also a fantastic topping for steak sandwiches or burgers.

> 4 red bell peppers
> 4 yellow bell peppers
> 1/4 cup olive oil
> 1 (0.75 oz) pkg fresh mint
> 1/2 cup crumbled feta cheese
> 2 tbsp sherry vinegar


Set grill to medium. Cut each pepper into quarters; remove seeds and stems. In a large bowl, toss peppers with the oil, salt, and pepper.
Place peppers on grill skin sides up. Cover and cook 5–6 min., until almost tender and grill marks appear. Flip over and cook 3–4 min., until tender. Remove peppers from grill.
Meanwhile, roughly chop the mint and crumble the feta cheese. Slice peppers and toss with vinegar, mint, salt, and pepper. To serve, garnish with feta.
