Lettuce Cups with Turkey and Quinoa

These light and easy lettuce cups are great for lunch or dinner and are packed with protein.

> 1 (24 oz) bag frozen turkey meatballs, thawed
> 1 (16 oz) jar Taste of Inspirations® Mango Pineapple Salsa, divided
> 1 tbsp olive oil
> 2 heads butter lettuce
> 1 (10 oz) bag Asian-Style Frozen Vegetables & Quinoa


Cut meatballs into quarters or eighths. In a medium microwave-safe bowl, toss together the meatball pieces, ¾ jar salsa, and oil. Toss to combine. Season with salt and pepper. Microwave 3–4 min., until meatballs are heated through.
Wash and separate the lettuce leaves. Microwave the quinoa mixture according to package instructions. Stir warmed quinoa into meatball mixture. Spoon meatball mixture into lettuce cups and serve with remaining salsa for dipping.
