2 (12 oz) bags Nature's Promise ® Organic Frozen Mango Chunks

1 (13 oz) can lite coconut milk

1/3 cup chia seeds
>
1 tsp pure vanilla extract
>
4 tbsp unsweetened flaked coconut or coconut chips

Reserve and refrigerate ½ cup mango chunks. To a blender, add the coconut milk, ½ cup water, remaining mango, chia seeds, and vanilla. Purée until smooth.

Divide mixture among 4 (1-cup) jars or pour into 1 large container. Cover and refrigerate for 5 hours or overnight. To serve, top with flaked coconut and reserved mango chunks.
