> 1/4 cup honey
> 1 bunch mint
> 5 blood oranges
> 1 1/2 cups mango juice
> 1 1/2 cups passion fruit juice
> 1 (750 ml) bottle dry sparkling white wine or sparkling water
In a small saucepan, whisk the honey and 1½ cups water. Add the mint. Heat to a boil on medium-high, stirring occasionally. Remove from heat and cool completely. Discard the mint.
Into a large pitcher, squeeze all the juice from the blood oranges. Stir in the mint syrup, mango juice, and passion fruit juice. Refrigerate until cold. When ready to serve, stir in sparkling wine or water. Garnish glasses with additional mint, if desired.
