Mardi Gras Sundaes

This fresh dessert is a delicious way to cool down. Fresh fruit is served on frozen yogurt scoops, then a sauce full of brown sugar, orange juice and rum flavors is spooned over the top for a festive and unforgettable treat.

Ingredients

> 1 medium banana, peeled
> 1 kiwi fruit, peeled
> 12 red or purple grapes or purple grapes
> 1 tbsp butter
> 2 tbsp light brown sugar
> 2 tbsp orange juice
> 1/2 tsp vanilla extract
> 1/2 tsp rum extract (optional)
> 2 cups low-fat frozen yogurt, divided

Steps

Slice banana into 1/4-inch thick rounds. Slice kiwi into 1/4-inch thick rounds then slice each round into 4 sections to form triangles. Remove grapes from stems.

Melt butter in a skillet over medium heat; stir in brown sugar and cook until sugar dissolves.

Stir in orange juice and continue to cook until a smooth syrup forms and mixture bubbles and thickens, about 3 minutes. Remove from heat and stir in extract.

To assemble sundaes, scoop 1/2 cup frozen yogurt into each sundae cup. Top each with banana slices, kiwi triangles and grapes. Spoon syrup over the fruit.
