Ingredients

3 tbsp olive oil

1 tbsp lemon juice

1/2 tsp Italian seasoning

1/2 tsp garlic powder

1/4 tsp salt

1 lb flank steak
>
3 bell peppers
>
8 corn tortillas

1 tsp chili powder

1/2 cup prepared guacamole

1/2 cup salsa

In a baking dish, whisk together 2 tbsp oil, lemon juice, Italian seasoning, garlic powder, and salt. Add flank steak to dish and toss to coat. Let sit 10 min. at room temperature. Remove meat from marinade, discarding marinade.

Set grill to medium-high. Seed and quarter bell peppers. Toss with remaining 1 tbsp oil. Season with salt and pepper.

To the grill, add steak and bell peppers. Cook peppers 5 min. per side, until tender and browned in spots, and cook steak 7–8 min. per side, until desired doneness. Remove steak and let rest 5 min.

Wrap corn tortillas in a damp paper towel and microwave 30 sec. until warm. Thinly slice the steak and bell peppers and add to a medium bowl with chili powder. Toss to combine. Add steak and pepper mixture to tortillas, serving with guacamole and salsa.
