Meat & Veggie Campfire Packets

When you're out camping, dinner needs to be as simple as possible without sacrificing taste. That's what these meat and veggie campfire packets deliver. Ground beef, onion, peppers and potatoes combine in an aluminum packet you cook directly on the coals—no pots or pans needed.

Ingredients

> 1 lb lean ground beef or ground turkey
> 1 onion, sliced
> 1 lb potatoes, sliced 1/2 inch thick
> 1 red or green pepper, cut into strips
> 4 tsp butter

Lay out 4 pieces of heavy-duty foil.

Form meat into 4 patties and place one on each piece of foil. Top patties with onion, potato and pepper. Dot each with 1 teaspoon butter.

Fold into a packet to seal. Place packet on hot coals of a campfire or charcoal grill and let cook for about 20 minutes.

Remove from coals and open carefully. Season to taste.
