Ingredients

1/2 zucchini

1 (15 oz) can artichoke hearts

1 plum tomato

1/2 red bell pepper

2 tbsp olive oil

1 tbsp Italian seasoning

1 (16 oz) pkg pizza dough

Flour, for dusting

1 cup shredded mozzarella cheese

Preheat the oven to 425°F. Dice the zucchini into ¼-inch pieces. Drain the artichoke and roughly chop. Dice the tomato and the bell pepper.

Add 1 tbsp olive oil to a skillet over medium-high heat. Sauté the zucchini, artichokes, tomato, and bell pepper with Italian seasoning for 5 min., until tender. Season with salt (in moderation) and pepper.

Meanwhile, divide the dough into 2 equal pieces. Dusting lightly with flour, roll the dough into 10-inch circles. Place the dough on a parchment-lined baking sheet.

Spoon the vegetables evenly onto half of each circle. Top each with ½ cup cheese. Fold the other half of the dough over the vegetables, making sure not to rip the dough, and press edges firmly to seal. Brush both with remaining olive oil. Bake for 20 min., or until golden brown.
