Ingredients

> Cooking spray
> 2 medium carrots
> 1 medium zucchini
> 2 large eggs
> 1 (1.5 oz) pkg McCormick Meatloaf Seasoning Mix
> 3/4 cup ketchup, divided
> 1 cup Italian bread crumbs
> 2 lbs 85% lean ground beef

Serve with;

> Sweet whole kernel corn no salt added, optional
> Baby red potatoes, optional
> Carolina 90 Second Rice, optional

Preheat oven to 350°F. Line a rimmed baking sheet with parchment and coat with the cooking spray.

Using a box grater, coarsely grate the carrots and zucchini into a large bowl, aiming for around 1½ cups total. To bowl, add the eggs, meatloaf mix, ½ cup ketchup, and ¾ cup water. Mix well to combine. Season well with salt and pepper. To bowl, add the bread crumbs and ground beef. Mix until just combined. Add meat mixture to baking sheet and shape into a loaf.

Bake 1 hour. Glaze top of meatloaf with remaining ¼ cup ketchup. Continue baking 15–20 min., until internal temperature is 165°F. Cool slightly, then cut into ½-inch slices.
