Ingredients

1 pint mixed-color grape tomatoes, halved

4 (4 oz) boneless, skinless flounder fillets

1 lemon

1 (1/2 oz) pkg Nature's Promise® Roasting Blend (Rosemary, Parsley & Thyme)

1 (15.9 oz) pkg Nature's Promise® Precooked Brown Rice

Preheat oven to 400°F. Divide tomatoes among 4 large squares of parchment, placing them to one side of each sheet, and season with salt. Place fish fillets on top of tomatoes. Drizzle ½ tbsp olive oil over each fillet and grate zest from the lemon over fish. Season fillets with salt and pepper and top with a few sprigs of the rosemary and thyme.

Fold the excess parchment over fish and roll the sides tightly to seal. Place packets on a large rimmed baking sheet and bake 15–20 min., until fish is cooked through and tomatoes are softened.

Meanwhile, microwave the rice according to package directions. Carefully open fish packets (steam will be hot). Remove and discard rosemary and thyme sprigs. Chop parsley leaves and sprinkle over fish. Cut lemon into wedges for squeezing and serve fish packets with rice.
