Mediterranean Pork Chops

Store-bought Greek feta salad transforms ordinary pork chops into an easy 5-ingredient, one-skillet meal. Serve with a side of orzo or pasta for even more of a Mediterranean flair.

> 1 (16 oz) pkg Nature's Promise® Boneless Pork Chops
> 2 tsp Italian seasoning blend
> 2 tbsp olive oil, divided
> 1/2 cup sun-dried tomatoes
> 1/2 (7 oz) pkg Taste of Inspirations® Greek Feta Cheese Salad


Season the pork chops with salt and pepper. Sprinkle the Italian seasoning blend on both sides of pork chops. In a 12-inch nonstick skillet, heat 1 tbsp oil on medium-high. Add pork chops and cook 3–5 min. per side., until internal temperature is 145°F.
Meanwhile, roughly chop the sun-dried tomatoes. Roughly chop the olives in the Greek feta salad. In a small bowl, combine Greek feta salad, sun-dried tomatoes, and remaining 1 tbsp oil. Transfer pork chops to a plate or platter. Top with sun-dried tomato mixture and serve.


Make the feta salad yourself by combining ¼ cup crumbled feta cheese, ¼ cup pitted Kalamata and/ or green olives, and 2 tbsp olive oil.
