Midwestern Farm Burger

This morning treat wouldn’t be complete without a fried egg!

Ingredients

> 5 tbsp finely chopped fresh chives
> 8 oz cream cheese
> 8 slices bacon
> 4 eggs
> 1 ripe avocado
> 4 sandwich rolls
> 3 oz arugula
> 1/2 cup alfalfa sprouts (about 3/4 oz.)

Steps

Finely chop the chives and mix into the cream cheese.

Heat a frying pan without oil or butter and fry the bacon in batches. Drain the bacon on paper towels and fry the eggs in the leftover bacon grease.

Halve the avocado and remove the pit. Scoop the flesh from the peel and cut into slices.

Heat the frying pan. Cut the rolls in half and grill cut side down for 2 minutes.

Spread the chive mixture onto the bottom halves of the buns. Top with lettuce, bacon, avocado, egg and alfalfa sprouts. Sprinkle with (freshly ground) pepper.

Put the top of the bun on the sandwich.
