Mini Honey and Apple Tartlets

These sweet little treats are simple enough to be an everyday dessert but are also elegant enough to serve to guests. The apples and honey also make them great for Rosh Hashanah.

> Cooking spray
> 1 puff pastry sheet, thawed
> 1 Golden Delicious apple
> 1 Gala apple
> 1/4 tsp almond extract
> 1/4 tsp ground ginger
> 1/8 tsp ground cloves
> 3 tbsp apricot jam
> 1/4 cup sliced almonds
> 2 tbsp honey


Preheat oven to 375°F. Coat a 12-cup muffin pan with cooking spray.
Unfold and roll the puff pastry into a 9x12-inch rectangle. Cut into 12 squares (about 3x3-inch each). Tuck each square into a muffin cup.
Core and finely chop the apples and add to a large bowl, along with the extract, ginger, cloves, jam, and pinch of salt. Stir to combine. Divide mixture among pastry cups. Bake 20 min., until pastry is golden and cooked through.
Cool tartlets in pan on wire rack. Remove from pan and garnish with almonds. Drizzle with honey to serve.
