1 (2 - inch) piece fresh ginger, scrubbed

1 bunch mint, trimmed and washed

3/4 cup sugar

1 cup water

Pinch of salt

Thinly slice the ginger and place in a 2-qt saucepan, along with the mint, sugar, water, and salt. Heat on medium, until sugar dissolves, stirring occasionally. Remove from heat. Let stand 30 min.

Strain syrup into a measuring cup, pressing on solids. Refrigerate until cool before using. Keep refrigerated up to 1 month.
