Moscato Poached Pears

Pears poached to a tender perfection are a light ending to a satisfying autumn meal.

Ingredients

> 8 Bosc pears
> 1 inch piece fresh ginger
> 1 lemon
> 1 1/2 cups Moscato or other sweet white wine
> 1/2 cup sugar
> 6 star anise

Peel the pears, leaving the stalks intact. Cut a slice from the bottom so that they stand upright. Peel and mince the ginger and zest and juice the lemon.

In a pan big enough to fit the pears snugly, heat the wine, sugar, ginger, lemon juice and zest and star anise, stirring until sugar is dissolved.

3 Put the pears in the pan, pouring in enough water to cover. Bring to a simmer and cook on low heat, partially covered, 50 min. Remove the pears with a slotted spoon to a serving dish and let the liquid continue to cook on medium heat, about 10 min., or until reduced to a syrup. Pour over the pears.

Tips

You can make the pears 5 days in advance. Store, covered in the cooking liquid, in the refrigerator.
