Apple and Honey Tart

> 1 cup whole wheat flour
> 2 oz oatmeal
> 1/3 cup coconut oil
> 1/2 cup honey
> 1 large egg
> 2 tbsp cinnamon
> 1 tsp salt
> 2 apples
> 1/2 cup dried cranberries


STEP 1 Preheat the oven to 350°F. Put the flour, oatmeal, oil, ⅓ cup honey, egg, 1 tbsp cinnamon, and salt in a bowl. Mix for 3 min, until a uniform dough is formed. Grease a 10-inch tart pan. Peel and core the apples.
STEP 2 Press the dough into the tart pan to form a ¼-inch thick layer. Spread the cranberries over the top. Cut apples into ½-inch pieces and place in a bowl. Add the remaining honey and 1 tbsp cinnamon, and mix well. Spoon the apples in the tart pan, leaving a small border around the edge. Bake the tart for about 40–45 min., or until golden brown. Let cool and serve.
