Muesli Bars

Ingredients

> 1/2 cup dried apricots
> 2 3/4 cup muesli or old fashion rolled oats
> 1/2 cup dried cranberries
> 1/2 cup raisins
> 2 eggs
> 1 tsp baking powder
> 1/2 cup honey
> 1/4 cup butter

Preheat the oven to 350 °F.

Line an 11x7-inch baking dish with parchment paper.

Cut the apricots into pieces and put them in a bowl with the muesli or rolled oats, cranberries and raisins. Mix in the eggs and baking powder.

In a small saucepan heat the honey and butter until melted and mix with the muesli. Press mixture into the baking dish. Bake approx. 25 min.

Let the bars cool for two hours before removing from pan. Cut into 14 bars and store in a sealed container.
