Ingredients

1 (24 oz) pkg steamable fingerling potatoes

2 stalks celery

1/2 bunch scallions

1/2 cup plain Greek yogurt
>
1/4 cup mayonnaise
>
2 tbsp horseradish
>
1 tbsp whole grain mustard
>
2 tbsp apple cider vinegar

Microwave potatoes on HIGH for 8 minutes. Let cool for 5 minutes before opening package.

Meanwhile thinly slice celery and scallions and place in a large bowl. Add the yogurt, mayonnaise, horseradish, mustard, and vinegar. Season with salt(in moderation) and lots of black pepper. Mix until smooth.

Cut potatoes into bite sized pieces. Toss with the celery and scallion mixture. Chill until serving.
