> 1 (14 oz) bag frozen tortellini
> 1 tbsp olive oil
> 1/2 lb medium peeled and deveined shrimp
> 2 tsp minced garlic
> 1 tsp Italian seasoning
> 1/4 tsp red pepper flakes
> 1 1/2 cups marinara sauce
> 1/2 cup heavy cream
> 4 oz fresh spinach (about 4 cups)
Bring a large pot of water to a boil over high heat. Cook tortellini according to package directions and drain.
Return pot back to the stove and reduce heat to medium high. Add the olive oil, shrimp, garlic, Italians seasoning and red pepper flakes. Cook for 3-4 minutes stirring occasionally, or until shrimp is pink and firm.
Add the cream and marinara sauce. Bring liquid to a boil and reduce heat to medium. Add the cooked tortellini and spinach and cook in the sauce for 2-3 minutes. Let stand for another few minutes before bowling up. Enjoy!
