Oven-Fried Fish Sticks

This homemade version of a freezer-aisle classic uses mild flounder to entice those who aren’t normally fish fans.

Ingredients

> Cooking spray
> 3 green onions
> 1 1/2 lbs flounder fillets
> 1 large egg
> 1 cup seasoned panko bread crumbs, divided
> 1 (20 oz) pkg Nature's Promise® Sweet Mashed Potatoes
> 1/2 cup tartar sauce

Preheat oven to 450°F. Line a baking sheet with parchment and coat with cooking spray. Slice the green onions, reserving green parts for garnish. Cut the flounder into chunks.

In a food processor, pulse the flounder, white parts of green onions, salt, and pepper until chopped. Add 4 tbsp bread crumbs and egg and pulse until finely chopped.

Place remaining bread crumbs in a shallow dish. Form the fish mixture into 12 logs and roll in bread crumbs to coat, then place on prepared pan. Generously coat with cooking spray. Bake 12–15 min., until crumbs are golden brown.

Meanwhile, prepare the mashed potatoes according to package directions. Serve fish sticks with tartar sauce and mashed potatoes. Garnish with reserved green onions.
