Layered Muffuletta Salad

This easy salad is inspired by the classic Italian sandwich invented in New Orleans. Try serving it in one large dish or several individual bowls.

Ingredients

> 4 cups spring lettuce mix
> 2 oz salami, diced
> 4 oz sharp provolone cheese, diced
> 3 stalks celery, chopped
> 1 red bell pepper, seeded and chopped
> 1/4 cup sliced pepperoncini
> 1 (6.5 oz) can sliced olives
> 1/4 cup grated Parmesan cheese
> 1/4 cup olive oil
> 3 tbsp red wine vinegar
> 1 tsp dried parsley
> 1 cup whole-wheat croutons

In a large bowl or trifle dish, layer the lettuce, salami, provolone, celery, bell pepper, pepperoncini, olives, and Parmesan cheese.

When ready to serve, whisk together the oil, vinegar, and parsley in a small bowl. Season with salt and pepper. Drizzle dressing over salad. Sprinkle with the croutons.
