Overnight Oats

Prep these in the evening and next day’s breakfast is ready and waiting. You’ll need 4 8-oz mason jars or other containers with tight lids.

> 1/4 cup unsweetened coconut flakes
> 2 cups rolled oats, not instant
> 1/4 cup goji berries
> 2 tbsp agave syrup or honey
> 1/4 cup ground flax meal
> 2 2/3 cups orange juice


Heat an ungreased skillet over medium heat and toast the coconut chips 2 min. Let cool on a plate.
Divide the oats, dried cranberries, agave syrup and flax meal among the jars. Pour in the orange juice and stir well. Sprinkle the coconut chips on top, cover and refrigerate overnight.


If you can’t find goji berries, dried cranberries are a good substitute.
