Ingredients

4 oz short whole-wheat pasta (ziti, penne, rotini, etc.)

1/2 lb fresh kale
>
1 tsp olive oil
>
1/4 cup minced onion
>
1 cup water
>
4 tbsp grated Parmesan cheese
>
ground black pepper to taste

Cook pasta according to package directions. Drain and keep warm.

While pasta cooks, trim center ribs from kale leaves and chop leaves into thin ribbons.

Heat oil in a large skillet over medium heat. Saute onion until tender, then add kale and 1 cup water. Cover and reduce heat, let simmer about 10 minutes or until kale is tender.

Add kale to pasta and toss together. Sprinkle each serving with 1 tablespoon of Parmesan and add pepper to taste.
