Ingredients

1 tbsp olive oil

1 lb medium shrimp, peeled and deveined

1 cup sliced roasted red bell peppers
>
2 cups baby spinach
>
1 (9 oz) pkg Taste of Inspirations® Three Herb Fettuccine

1/2 cup prepared pesto
Steps

On high heat, bring a large pot of water to a boil while heating a large skillet over medium heat.

Add the oil to the hot skillet, followed by the shrimp. Cook for 2-3 min., until shrimp is cooked. Add in the roasted peppers and spinach.

Add the Taste of Inspirations Three Herb Fettucini to the hot water. Cook for 3-4 min until tender. Drain well, and add to the skillet with shrimp and vegetables.

Mix in the pesto with the pasta, shrimp and vegetables until well coated. Bowl up and enjoy.
